Chef Philip Brazil

I came across this tasty dressing while visiting family in Ireland recently. Chef Philip Brazil was kind enough to share his recipe with us. Enjoy!
Ingredients
1 1/4 Cup of Traditional Balsamic
1 tsp Dijon Mustard
1 tsp Wholegrain Mustard
2 tsp Brown Sugar (optional - I find the honey and balsamic sweet enough)
1 Minced garlic or garlic olive oil
3 1/5 tsp Honey
1/2 tsp Salt
3/4 Cup Extra Virgin Olive Oil (or combination of garlic and EVOO)
< 1/4 Cup of ice cold water
Directions

Using a hand blender, mix the balsamic, mustards, garlic, honey and salt.

Slowly add olive oil with the mixer at full speed

Slowly add in approximately 1/4 cup of ice cold water.

The blending emulsifies the mixture giving it a nice creamy texture and removes the dark color of the Traditional Balsamic.

 

This is a great recipe that can be modified in many different ways using a variety of flavored olive oils and balsamics. Play around and enjoy.
