Many of the recipes we post on our website are provided by customers or staff members. This Persian Lime recipe comes from the staff at Carmel Food Tour!…so a special shout out to Mig for providing this tasty recipe.
Whole organic chicken
1 yellow onion
1 garlic clove
Rosemary sprig (optional)
Table spoon of lemon pepper
Half teaspoon of sea salt
1 large lemon
1/2 cup of Persian Lime olive oil
Rinse and pat dry the chicken
Cut the onion, carrot, garlic, rosemary and put it in the chicken’s cavity
Drizzle the olive oil all over chicken rub it in.
Add lemon pepper and salt and give it a good massage!
Squeeze the lemon and juice over the chicken. Stuff the remaining lemon into the cavity too.
Cover tightly with foil and cook for 45 mins or so at 400 degrees uncover and cook another 10 mins til browned.
